This recipe for M&Ms Valentine’s sugar cookie bars are so easy to make and require very few ingredients. This is the only soft and chewy sugar cookie bar recipe you’ll ever need, all made in one bowl, and the M&Ms and pink frosting make it fun and festive for a holiday treat!
Ingredients in Valentine’s Sugar Cookie Bars
There are few few ingredients needed for these sugar cookie bars made with M&Ms. Of course, you’ll need M&M’s! To keep these festive for Valentine’s, use a bag of the Valentine’s pink, red and white M&M’s.
You will need white sugar, room temperature butter, eggs, flour, salt and baking soda. Vanilla extract is also called for, or you can use a vanilla or cookie baking emulsion instead of the extract. Baking emulsions give a more “pure” flavor, because the flavor is suspended in water instead of alcohol like in extracts.
How to Cook Sugar Cookie Bars
First, start by preheating your oven to 350 degrees F. and lining an 8×8 or 9×9 baking dish with parchment paper. Then in a mixing bowl, you will combine the sugar and butter together until it’s all incorporated and soft. Using a mixer is easiest for this.
Then you’ll add the eggs and vanilla extract into the mixing bowl and again mix together until fully combined. The remaining step to make the sugar cookie batter is to add the flour, baking soda and salt into the mixing bowl and combine until a dough is formed.
Once you have your sugar cookie dough, gently fold in the M&M’s. It will likely be easiest to use your hands for this step. Then transfer the dough into your baking dish and press it into an even layer. Add a few additional M&M’s to the top and press into the dough for baking if you’d like!
Place your baking dish into the prepared oven and bake for about 30-35 minutes, or until the sides of the bars are golden and the middle has set. Remove the dish from the oven and let them cool prior to frosting them or cutting into them.
Tips for Making Sugar Cookie Bars
These perfectly moist sugar cookie bars with Valentine’s M&Ms are really hard to mess up! To make sure you don’t overcook, start keeping an eye on them around 28-30 minutes.
If you don’t have Valentine’s M&M’s, you can use pink and red sprinkles in the dough instead. This will make them more of a funfetti sugar cookie bar.
This recipe does work with melted butter instead of just room temperature soft butter. If you haven’t pulled the butter out of the fridge beforehand or do not want to wait for it to soften, you can microwave it to melt. Do not use cold butter from the refrigerator as it will make the dough clumpy and you will have a hard time incorporating the cold butter into the flour and sugar.
You can use gluten free 1:1 baking flour for this recipe. However, it may need a few more minutes time to bake, so between 30 and 35 minutes.
These Valentine’s sugar cookie bars can be doubled. Multiply the recipe by exactly 2, and use a larger 9×13 baking dish. Bake for 30 minutes, keeping an eye on them at 25 minutes. When the edges are slightly golden brown and the middle is set, pull them out of the oven.

We absolutely loved these bars! They were thick, soft, PERFECT flavor and not too too overly sweet. They are delicious and earned a permanent spot in our dessert rotation. Bonus – we had all ingredients on hand. Definitely going to switch them up with different colored m&ms for each holiday!
