Blueberry Baked Oatmeal

This blueberry baked oatmeal is an easy breakfast or snack recipe to prepare ahead of time. It’s a breakfast that can be eaten on the go, or served in the morning for the whole family. This baked blueberry oatmeal is also vegetarian and gluten-free. Use fresh or frozen blueberries, or swap in fruit already in the fridge!

Ingredients

  • 1/3 cup honey
  • 1 egg
  • 2 cups unsweetened almond milk
  • 1/4 cup melted butter
  • 2 tsp vanilla extract
  • 2 cups old fashioned oats
  • 2 teaspoons cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 oz blueberries (about 1 and 1/2 cup – frozen or fresh)

Instructions

  1. Preheat the oven to 350 degrees F. and grease an 8×8 baking dish with cooking oil spray
  2. In a bowl, mix together the wet ingredients- honey, egg, milk, melted butter, and vanilla extract
  3. In a separate bowl, combine the oats, cinnamon, salt and baking powder. Pour in the wet ingredients and stir to combine. Then stir in half of the blueberries
  4. Pour the oat mixture into the baking dish, top with the rest of the blueberries and bake for 40 minutes, or until the top is golden brown

Notes

  • Let cool completely before refrigerating
  • Add a splash of milk before reheating
