Ingredients
- 1/3 cup honey
- 1 egg
- 2 cups unsweetened almond milk
- 1/4 cup melted butter
- 2 tsp vanilla extract
- 2 cups old fashioned oats
- 2 teaspoons cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 8 oz blueberries (about 1 and 1/2 cup – frozen or fresh)
Instructions
- Preheat the oven to 350 degrees F. and grease an 8×8 baking dish with cooking oil spray
- In a bowl, mix together the wet ingredients- honey, egg, milk, melted butter, and vanilla extract
- In a separate bowl, combine the oats, cinnamon, salt and baking powder. Pour in the wet ingredients and stir to combine. Then stir in half of the blueberries
- Pour the oat mixture into the baking dish, top with the rest of the blueberries and bake for 40 minutes, or until the top is golden brown
Notes
- Let cool completely before refrigerating
- Add a splash of milk before reheating
